I spent the better part of the day flying around Cannon in Faribault. The lake is currently 95% snow covered. The snow is about one inch deep, and a bit crusty-- just what is needed to hold an edge and to soften landings on jumps. There are small ice spots here and there, but they are not much of an issue at all.
Lots of people stopping to watch-- I don't think they have ever seen anything like it. A W/NW tack runs parallel to 35W, so you can go neck-and-neck with cars going 70mph. I was not able to quite keep pace with the cars, but it was fun trying.
Oddly, there is a strip of open water that runs almost the width of the lake on the south side. It is clearly visible, so it should not be a problem if you stay away from it. There are fish houses pretty close to it. Like Calhoun, Cannon is high in chemical concentration, so it takes quite a lot to freeze it.
Put away the skates, get in the car and drive south!

Good ol' Cannon Lake. I sailed out of that kite launch. I would Kite Cannon out of any direction, really. On a NW, the wind sweeps through nicely. W would be great too. The pier on the N side is obviously best for southerlies.
You will not regret the trip if there is any wind. I don't know of a better kiting spot right now.
