I would like to know how do you transport this thing and how much is it going to cost ($4,000+ ?). I think that you would need a trailer. Interesting concept though.

It'd be fun to brainstorm like that for more wind toys..
Looks neat but I don't think Hobie or other windsurfing companies will be too worried. I could see having something like this if you live on a lake or have a cabin on a lake but it seems impractical for the masses due to difficulty in bringing around to different lakes and having the right access.. unless you trailor it or come up with creative way to put together and resuse as kayaks....
I've completed switched to kiting except windsurf about 6-8x a year with my now 8 yr old daughter. We each go out on our own boards but attached by rope. We have a great time but if there is only one sail then this concept doesn't seem too different from us taking my real catamaran out for a ride. That's fun in a different way because they can hang on the trapeze or sit out on the front tramp and get wet on hot days.

Kevin, my family seems to be in the same boat as yours (pun intended), except mine is a bit overloaded & underpowered at the moment. Great fun, our dog even likes to go along. The Sarboard cat looks kind of cool, one more toy I don't need, though. I watched the the Starcat video.
