I like to visualize a gybe as closer to a 90 degree turn - entering on a broad reach and exiting on a broad reach for max speed - rather than a full 180 which can lead to rounding up and stalling. DCS refers to the construction. If I remember right Mistral had two types in that era, DCS and LCS. DCS (Durable Carbon System) was their standard build with a strip or two of carbon reinforcement, it was more durable and less expensive.
